To make the cookies, weight out 40 g of dough for each cookie.
Form the cookie dough into circles and then flatten into a disk. Place a chocolate square in the middle. Fold over and seal.
Place cookies on a baking sheet.
Bake the cookies in the oven for 15 minutes at 200 C. Or bake until golden brown.
Allow the cookies to cool and then roll each cookie in some powdered sugar.
Serve the cookies once they have completely cooled down.
Notes
When mixing the butter and sugar, mix until the butter has softened and incorporated well with the sugar. You are looking for an almost fluffy texture.
Gradually add in the ice cold water as you may not end up needing all of it.
Use your hands to form the dough. In doing so you are more likely to see if the dough is sticking well together.
These Chocolate Snowball Cookies can be stored for up to a week in an airtight container or frozen for a few months. If you choose to freeze them, open the container before you thaw them, to allow the moisture to escape. Thaw completely before serving.
